It is that time of year again whereby we reconfirm all reservations on the books for 2013 with advance deposits. This process takes us about 14 days. During this process cancellations and changes do occur, so if you are searching our online booking availability option and it shows no availability, please drop us an email from our Contact Us page or call us toll free. It takes a few days for us to update all of our availability and the dates you are looking for may actually be available. We look forward to hosting you in 2013.

We are deep into our planning for the 2013 Operating Season. It is our goal to provide you with new ‘value-added’ vacation packages and to also enhance some of our favourites such as our family Then and Now, our Love in Cavendish, our numerous Golf vacation packages and our extremely successful Storybook Cycling and Hiking package. It is our goal to go live with our new product offerings by the end of November, 2012. We are also adding a new chalet opening in May 2013. As we begin packing up our office for the annual move to our Charlottetown office, we do so with smiles on our faces. It was a wonderful operating season with the very best weather & best guests experienced since our opening. Our office is in full operational with a slight disruption in service for 48 hours during the move. All of our chalet inventory will go live in mid-November. Officially Fall yet the temperature today, September 23, is forecasted at 23 degrees and sunny. The rest of the week is also forecasting 20 degrees and sun. What a spectacular season with respect to the weather. It is simply the summer that started in Spring – May and just won’t end. We look forward to welcoming you to Fairways Cottages. Our guests start arriving today for the P.E.I. International Shellfish Festival having purchased our Bounty of the Sea and Soil package. Weather looks great and by all accounts the festival will be another smashing success. While it is a busy weekend at Fairways Cottages, as at September 11 we still have three chalets left available. If you have never visited Prince Edward Island or never participated in this festival, we encourage you to come on over….it is just so darn good. Be hungry, there is no shortage of delectable seafood and foot stomping entertainment.

September is our favourite month on Prince Edward Island. The days are warm and sunny, the evenings fresh and crisp and the colours are breathtaking! Restaurants, museums, attractions, hiking and biking trails, shopping, beaches, golf courses and accommodations are in full operation. Our wonderful families have returned home to settle the children back in school and our couples start arriving on September 2nd. In celebration of the harvest, we thought you might enjoy some of PEI’s interesting recipes. What could be more Island than the PEI potato? Check out the website for additional spud recipes. Potato and Apple Pie Try PEI Potatoes in this sweet dish, for added nutrition to your dessert! Ingredients 4 large potatoes (peeled), 4 apples, 2 tbsp butter, 4 cups simple syrup (equal parts sugar/water), 1 whole cinnamon stick, 1 star anise , 1 tbsp brown sugar, 1 tsp cinnamon ground, 1/2 cup raisins, 2 cups chopped pecans. Add 2 cups water and 2 cups of sugar to deep pot. Bring to a simmer until sugar is dissolved (simple syrup). Remove ¼ cup of simple syrup and set aside. Keep remaining simple syrup on medium heat adding the cinnamon stick and star anise. Slice potatoes ¼ inch thick and add to the pot of simple syrup. Let potatoes steep in syrup until just tender. Remove the potatoes from the syrup and set aside. In a mixing bowl toss the ¼ cup of simple syrup with chopped pecans and set aside. Peel and slice apples. Sauté apples with butter, brown sugar, ground cinnamon and raisins. Layer the potato slices and sautéed apples alternately in pie crust. Top with simple syrup coated chopped pecans. Place in preheated 350 degree oven for approximately 25 minutes. Recipe from the Royal Agricultural Winter Fair, prepared by Chef Gordon Bailey, chef and owner of Lot 30 in Charlottetown, PEI
Fairways Cottages wishes to congratulate all of Canada’s athletes who competed at London 2012 Summer Olympics. You made out country proud. A special congratulations to P.E.I.’s Jared Connaughton whose humble admission for his error stepping on the line in the relay inspired an entire nation. To quote one facebook post, “Heart-breaker for Jared and the Canadian relay team. Then emerged from the mayhem – a total class act! The courage Jared showed in how he handled himself in the aftermath makes him more than just a world class sprinter, he’s an inspiration to human spirit!”
